Shrimp salad with mushrooms

When the good weather arrives, salads and cold dishes are in demand, either as a complement to the meal or, as in this case, as a complete dish. This salad is very easy to make and is prepared in a moment.

The shrimp have high biological value proteins, high levels of calcium which gives strength to the bones and teeth (prevents osteoporosis) and a high iodine content, which helps us to regulate our metabolism, facilitating the functioning of the cells and regulating our energy levels. It has a high content of uric acid, which is not recommended for people who suffer from "Gout". They have a low amount of fat, but their cholesterol content is high, being practically all in the head. People with high cholesterol should not "suck" the head of the shrimp.

Mushrooms stand out mainly because of their vitamin and mineral content, but they also have protein, the content of which is higher when they are dehydrated. Among the minerals, we can highlight phosphorus, which is necessary for the formation of bones and teeth and to promote mental activity; potassium, which helps us to reduce liquid retention; and selenium, which is an antioxidant, preventing the degeneration of cells. It also has iron (it lacks phytate, a compound that reduces the absorption of this mineral), being more absorbable than other sources of iron. With regard to vitamins, those of the B group stand out, riboflabin favours hair growth and stops hair loss.

In short, we can say that we have a hypocaloric recipe, ideal for those people who diet to lose weight.

 

Elaboration:


We clean the shrimp and reserve.

Boil water in a small pot and cook the prawns for a few minutes.

Drain the prawns, let them cool down and set aside.

Put the sesame seeds in a frying pan on a low heat until they change colour, put aside and set aside.

Wash the lettuce and chop it to prepare the salad.

Wash the mushrooms, chop them and put them aside.

Peel the prawns.

Put 4 plates in which we distributed, the lettuce, prawns, mushrooms, add Extra Virgin Olive Oil, sesame seeds, thyme and salt and pepper to taste.
